I am not a foodie.
But, I have a few recipes I managed to steal from my Grandma’s house after she passed away before I was no longer allowed inside it. Considering that my mother can’t boil water and my sister considers fast food “home cooking”, I didnt think they would care.
So, here is one of my FAVORITE recipes. It is easy, cheap and freezes well. I do highly suggest you serve it with mashed potatoes though.
Grandma’s Sweet & Sour Meatballs and Cabbage
- 1 Cabbage
- 2 lbs ground beef
- 1/4 cup dry rice
- 1 tsp salt
- 1 onion, chopped
- 1 egg
- pinch of pepper
- pinch of chopped garlic
1.) Remove the core from the cabbage.
2.) Place the cabbage, core side up, into a large pot. Pour boiling water over the cabbage and cover for 10 minutes until the leaves are softened.
3.) Mix the above ingredients.
4.) Make a small handful, roll into a short log kind of shape, and roll inside a cabbage leaf.
5.) Lay the rolled cabbage into a casserole dish.
Sauce:
- 1 can of tomato soup
- 1 cup brown sugar
- 2 cups boiling water
- 1 Tbsp lemon juice
6.) Mix sauce ingredients together and pour over the rolled cabbage.
7.) Cover dish and bake in the oven at 350° for 2.5 hours, basting every 30 minutes.
8.) Serve hot (with mashed potatoes **wink wink**).
9.) Enjoy!
Aunt Helen made the BEST stuffed cabbage! She was also a wonderful baker. When I served my chocalate-mocha cheesecae she thought it was from a store until I gave her the recipe. I have so many fond memories of her (like Mickey Mouse Ears). Another time.
